Now that you read about how to cook a turkey in an unusual way. Here is a great stuffing recipe that my sister Joan came up with. All the credit goes to Joan.
With Mom and Dad on a very low-salt diet we needed a way to make some stuffing that was really quick and easy but also low in salt. Most of the ready made stuffing box mixes that you find on the grocery store shelves has alot of sodium. Just check the packages. One brand of the regular chicken flavor has 429 mg per serving. Joan put on her thinking cap and made this recipe. It adds some veggies and dilutes out the sodium content with 250 mg of sodium.
2 boxes of low sodium Stove Top Stuffing
1 can low sodium chicken broth
1 can (14oz) apple juice
1 can low sodium cream corn
1 handful dried cranberries
1 handful walnut or pecans (chopped)
1 medium onion (chopped)
2-3 stocks celery (chopped)
Preheat oven to 350 degrees F (176 degrees C)
Saute chopped onion and celery in 1 tablespoon of butter. Remove from stove.
In a large bowl add all the rest of the ingredients and toss in the onion and celery.
Place in a baking pan sprayed with non-stick cooking spray.
Cook for about 40 minutes.
Serve warm.
